Para preparar la cookies
  1. 112 g mantequilla salada
  2. 125 g harina tamizada
  3. 1 c.c bicarbonato
  4. 1 c.c levadura química
  5. 190 g chocolate negro
  6. 75 g azúcar
  7. 100 g azúcar moreno
  8. 1 huevo + 2 yemas
  9. extracto de vainilla
Instructions
  1. Precalentar el horno a 180ºC.
  2. Poner la mantequilla salada en un cazo al fuego y dejar que se derrita y que coja color avellana ( punto noisette).
  3. Apartar del fuego cuando este dorada y dejar enfriar en el mismo cazo durante 10 minutos.
  4. Pasar la mantequilla a un bol y añadir los azúcares y mezclar con ayuda de una varilla.
  5. Añadir el huevo y las yemas, mezclar y terminar con la vainilla.
  6. En otro bol tamizar los ingredientes secos.
  7. Mezclar las dos preparaciones y trabajar el conjunto, añadir los trocitos de chocolate y con el mezclador del robot de cocina o con las manos trabajar hasta conseguir una masa homogénea.
  8. Cubrir la masa con film y reservarla en la nevera durante 3 horas antes de hacer las galletas.
  9. A la hora de hacer las cookies ir pesando trozos de 35 g e ir formando bolas con ellos. Después con las manos aplastarlos un poco e irlos colocando en las bandejas de horno que tendremos forradas con papel..
  10. Ponerlas separadas en las bandejas porque durante la cocción crecerán.
  11. Hornearlas no más de 10-12 minutos!! ( comprobad a los 10 min como están)
  12. Es muy importante que queden poco hechas en el centro, de esta manera se conservarán siempre muy tiernas y crujientes a la vez.
  13. Retirarlas del horno dar un golpe a la bandeja, fuerte, así las galletas se abrirán por la superficie y quedarán perfectas.

  8. 110 g dark chocolate
  9. vainilla extract
Instructions
