Hoy me he levantado con ganas de salado así que os dejo la receta de mi ensalada Cesar que tanto me gusta. No suelo hacerla con pollo pero con este pollo crujiente está divina!!

La combinación del pan Ciabatta con los pistachos, cebollita seca y hierbas es maravillosa e ideal para empanar cualquier otra cosa.

Ensalada Cesar con pollo crujiente

Ingredients
  1. 1 lechuga trocadero o romana ( opcional)
  2. Croustones de pan tostado y crujiente con un poco de aceite
  3. 60 gr. de queso parmesano rallado.
  4. 60 gr. de beacon picado o en lardones
Para la salsa Cesar
  1. 1 diente de ajo.
  2. 4 anchoas muy picadas de calidad
  3. 3 yema de huevo
  4. Sal y Pimienta.
  5. Unas gotas de zumo de limón.
  6. 45 g mostaza de Dijon.
  7. 250 ml aceite de girasol.
Para preparar el pollo crujiente
  1. 2 pechugas de pollo de corral en filetes.
Para el crujiente
  1. 200 g ciabatta crujiente
  2. 40 g pistachos verdes
  3. tomillo,perejil y oregano seco
  4. 40 g cebolla seca crujiente
  5. Pimienta negra molida
  6. ( triturar todos los ingredientes en el robot de cocina).
Instructions
  1. Pinchar el diente de ajo con un tenedor.Untar un bol con el ajo y después añadir las anchoas muy bien picadas, las yemas de huevo y unas gotas de zumo de limón.
  2. Añadir la mostaza de Dijon y mezclar.
  3. Poco a poco y en hilo fino ir incorporando el aceite mientras vamos ligando el conjunto con ayuda de la varilla de mano. Si resultara la salsa demasiado densa añadir unas gotas de agua fría.
  4. Salpimentar y reservar en la nevera hasta la hora de utilizar.
  5. En una sartén sin nada de aceite saltear el beacon picado o en lardones hasta dorar.
  6. Una vez dorado reservarlo hasta la hora de utilizar sobre papel secante de cocina para retirar el exceso de aceite.
  7. En esa misma sartén marcar los filetes de pollo con un poco de aceite de oliva, no demasiado aceite, lo suficiente para que el pan se dore. Dar la vuelta a las pechugas una vez doradas y terminarlas en el horno a 185ºC durante 5 minutos. Retirar del horno y dejar reposar 5 minutos antes de cortar.
  8. Por otro lado lavar muy bien las hojas de lechuga y dejarlas enteras si son pequeñas y cortadas en trozos si son muy grandes.
  9. Preparar la ensalada cesar con el corazón de la lechuga trocadero o con las hojas más tiernas de la lechuga Romana.
  10. Napar las hojas de lechuga con la salsa Cesar e ir disponiéndolas en los platos o bandeja elegida.
  11. Poner la lechuga bien extendida y con volumen, espolvorear beacon crujiente, croustones de pan, micro mezclum , parmesano rallado y trozos de pollo crujiente.

Caesar salad with crispy chicken

Ingredients
  1. 1 Trocadero or Roman lettuce (optional)
  2. Croustones of toasted and crunchy bread with a little oil
  3. 60 gr. grated Parmesan cheese.
  4. 60 gr. of chopped beacon or in lardones
For the Cesar sauce
  1. 1 clove of garlic.
  2. 4 chopped anchovies.
  3. 2 egg yolk
  4. Salt and Pepper.
  5. A Few drops of lemon juice.
  6. 40 g Dijon mustard.
  7. 190 ml sunflower oil.
To Prepare Crispy Chicken
  1. 2 chicken breasts in fillets.
For The crunchy
  1. 250 g ciabatta
  2. 40 g Green Pistachios
  3. Thyme, parsley and dry oregano
  4. 40 g crispy dry onion
  5. Ground black Pepper
Instructions
  1. Prick the garlic clove with a fork. Spread a bowl with garlic and then add very well chopped anchovies, egg yolks and a few drops of lemon juice.
  2. Add the Dijon mustard and mix.
  3. Little by little and in fine thread go incorporating the oil while we go linking the assembly with the help of the hand rod. If the sauce is too dense add a few drops of cold water.
  4. Season and reserve in the fridge until the time of use.
  5. In a frying pan with no oil, skip the chopped beacon or lardones to brown.
  6. Once gilded, reserve it until it is time to use on kitchen blotting paper to remove excess oil.
  7. In the same frying pan, mark the chicken fillets with a little olive oil, not too much oil, enough for the bread to brown. Turn the breasts once golden and finish in the oven at 185 º C for 5 minutes. Remove from oven and allow to stand for 5 minutes before cutting.
  8. On the other hand wash the leaves of lettuce very well and leave them whole if they are small and cut into pieces if they are very large.
  9. Prepare the Caesar salad with the heart of the Trocadero lettuce or with the tender leaves of the romaine lettuce.
  10. Dip the lettuce leaves with the salsa Cesar and go arranging them on the dishes or tray chosen.
  11. Put the lettuce well spread and with volume, sprinkle crispy beacon, bread croustones, micro mezclum, grated parmesan and crispy chicken chunks.
