Prepararemos una mousse de frambuesa utilizando Buttermilk, ese será nuestro ingrediente secreto!!

No dejéis de hacerlos, son sencillamente divinos.

Para preparar la mousse de frambuesa
  1. 200 ml Buttermilk
  2. 2.5 colas de gelatina
  3. 50 g azúcar glass
  4. sal
  5. zumo de lima
  6. ralladura de 1/2 lima
  7. 200 ml nata doble
  8. 60 g azúcar super fino repostería
  9. 250 g frambuesas naturales
  10. zumo de limón
  11. Frutos rojos para terminar, menta...
Instructions
  1. Lo primero que debemos hacer es hidratar las colas de gelatina en agua bien fría.
  2. Mientras tanto mezclar con la varilla de mano en un bol la crema buttermilk con el azúcar glass y una pizca de sal.
  3. Escurrir y secar la gelatina y mezclarla con el zumo de la lima y la ralladura. calentar en el microondas hasta disolver la gelatina( 10 seg) y mezclar con la crema buttermilk.
  4. Triturar en el vaso de la batidora las frambuesas con unas gotas de zumo de zumo de limón y 30 g de azúcar súper fino hasta hacer un puré. Colar.
  5. Mezclar 125 g de puré de frambuesa con la crema buttermilk.
  6. Batir la nata doble con 30 g de azúcar súper fino y mezclar en 3 veces con la crema buttermillk de frambuesa con movimientos suaves y siempre de abajo arriba con ayuda de una espátula.
  7. Retirar 1/3 de mousse de frambuesa y mezclarlo con el resto de puré de frambuesa.
  8. A la hora de montar los vasitos empezar por la crema de frambuesa como podéis ver en la foto y terminar con ayuda de una manga pastelera con la mousse de frambuesa.
  9. Reservar en la nevera 1 hora antes de servir. Servir con frutos rojos por encima o como más os guste!

Instructions
