[:es]Cuando preparo este delicioso dulce siempre me acuerdo de ti mamá! Como tus finísimas y crujientes orejas de carnaval no hay ninguna.

 Las orellas de Entroido ( orejas de carnaval) son una sobremesa típica de las mesas gallegas en estas fechas de carnaval.

La receta que os voy a dar es muy fácil de hacer y os quedarán muy crujientes y sabrosas.

Para preparar la masa
  1. Ralladura de 1 naranja
  2. Ralladura de 1 limón
  3. 5 c.c. esencia de anís
  4. 250 g harina de repostería
  5. 1 huevo grande
  6. 50 g mantequilla
  7. 90 ml leche
  8. sal
Para freír
  1. Aceite de oliva 0.4
  2. Azúcar glass
Instructions
  1. Preparar la masa mezclando todos los ingredientes en la mesa de trabajo o en el robot de amasar.
  2. Amasar muy bien hasta conseguir una masa homogénea, fina y brillante.
  3. Es muy importante que no se pegue la masa a las manos, si fuera así añadir un poco más de harina.
  4. Formar una bola y dejar reposar la masa 15 minutos cubierta con un paño de cocina.
  5. A la hora de formar las orejas dividir la masa en dos.
  6. Estirar la masa sobre la mesa de trabajo con ayuda de un rodillo dejándola muy fina.
  7. Cortar la masa en porciones desiguales y dándoles formas distintas.
  8. Freír en abundante aceite de oliva bien caliente y darles un bonito color dorado. Se formarán sobre la masa unas burbujas que serán señal de que la masa está bien hecha y que quedarán muy crujientes.
  9. Ir retirándolas a una bandeja donde tendremos papel de cocina. Espolvorearlas con abundante azúcar glass y reservarlas a temperatura ambiente hasta la hora de servir y protegidas de la humedad.

To prepare the dough
  1. 1 orange zest
  2. Zest of 1 lemon
  3. 5 C.C. Anise Essence
  4. 250 g pastry flour
  5. 1 large egg
  6. 50 g butter
  7. 90 ml milk
  8. Salt
For frying
  1. Olive oil 0.4
  2. Sugar Glass
Instructions
  1. Prepare the dough by mixing all the ingredients in the work table or in the kneading robot.
  2. Knead very well until you get a homogeneous, fine and shiny dough.
  3. It is very important not to stick the dough to the hands, if it were to add a little more flour.
  4. Form a ball and let the dough rest 15 minutes covered with a kitchen cloth.
  5. When it comes to forming the ears divide the dough into two.
  6. Stretch the dough on the work table with the help of a roller leaving it very fine.
  7. Cut the dough into uneven portions and give them different shapes.
  8. Fry in plenty of very hot olive oil and give them a nice golden color. Bubbles will be formed on the dough that will be a sign that the dough is well made and that they will be very crispy.
  9. Go removing to a tray where we will have kitchen paper. Sprinkle with abundant glass sugar and store at room temperature until the time of serving and protected from moisture.
