Pistacho, ruibarbo, chantilly y merengue

Para el merengue
  1. 130 g pistachos verdes pelados
  2. 325 g azúcar
  3. 6 claras de huevo
  4. 25 g pistachos para terminar la tarta.
Para el relleno
  1. 600 g nata doble ( ideal para montar)
  2. extracto de vainilla
Para el curd de ruibarbo
  1. 375 g ruibarbo
  2. 75 g azúcar
  3. 1c.s maicena
Instructions
  1. Precalentar el horno a 180ºC.
  2. Preparar el curd de ruibarbo sacándole las hebras al ruibarbo, lavarlo y cortarlo en trozos.
  3. Disponerlo sobre la bandeja de horno que la tendremos forrada con papel Albal y exparcir 25 g de azúcar por encima y 30 ml de agua.
  4. Introducir en el horno durante 25 minutos( el ruibarbo quedará blandito y ligeramente dorado).
  5. Retirar del horno y triturarlo muy bien en el vaso de la batidora, colar la compota y mezclar con la maicena y el resto del azúcar. Poner al fuego y dejar hervir 1 minuto lentamente y sin dejar de mover. Apartar del fuego y reservar hasta utilizar.
  6. Preparar el merengue seco triturando con cuidado de no deshacerlos demasiado los pistachos verdes con 25 g de azúcar en el robot de cocina.
  7. Montar las claras de huevo y poco a poco ir añadiendo el azúcar.
  8. Una vez listo el merengue y con ayuda de una espátula añadir los pistachos y con movimientos envolventes mezclar el conjunto.
  9. Preparar 4 plantillas con papel de horno de 18 cm de diámetro cada una.
  10. Con ayuda de una manga pastelera escudillar el merengue de pistachos sobre las plantillas y hornear a 155ºC durante 30 minutos.
  11. Retirar los 4 merengues secos del horno y dejar enfriar.
  12. Montar la nata con unas gotas de extracto de vainilla.
  13. A la hora de montar la tarta en una bandeja de presentación disponer una base de merengue, cubrir con una ligera capa de nata montada y salpicar unas cucharadas de ruibarbo.
  14. Cubrir de nuevo con otro merengue y repetir la misma operación terminando con nata, curd de ruibarbo y esparcir los pistachos por encima.

For Meringue
  1. 130 g peeled Green pistachios
  2. 325 g sugar
  3. 6 egg whites
  4. 25 g pistachios to finish the cake.
For Filling
  1. 600 g double cream (ideal for riding)
  2. Vanilla extract
For Rhubarb Curd
  1. 375 g Rhubarb
  2. 75 g sugar
  3. 1 tbsp cornflour
Instructions
  1. Preheat the oven to 180 º C.
  2. Prepare the curd of rhubarb taking the strands to the rhubarb, wash it and cut it into pieces.
  3. Place it on the baking sheet that will have it lined with Albal paper and Exparcir 25 g of sugar above and 30 ml of water.
  4. Place in the oven for 25 minutes (rhubarb will be soft and lightly browned).
  5. Remove from the oven and grind thoroughly in the Blender bowl, strain the compote and mix with cornstarch and the rest of the sugar. Put on the fire and let it boil 1 minute slowly and keep moving. Remove from the fire and reserve until use.
  6. Prepare the dry meringue by mashing with care not to over-dispose the green pistachios with 25 g of sugar in the cooking robot.
  7. Assemble the egg whites and gradually add the sugar.
  8. Once the meringue is ready and with the help of a spatula add the pistachios and with enveloping movements mix the whole.
  9. Prepare 4 Insoles with 18 cm diameter oven paper each.
  10. Using a pastry sleeve, bowl the pistachio meringue over the templates and bake at 155 º C for 30 minutes.
  11. Remove the 4 dry meringues from the oven and allow to cool.
  12. Mount the cream with a few drops of vanilla extract.
  13. When assembling the cake in a presentation tray have a meringue base, cover with a light layer of whipped cream and sprinkle a few tablespoons of rhubarb.
  14. Cover again with another meringue and repeat the same operation ending with cream, curd of rhubarb and sprinkle the pistachios above.
