To prepare the cake
  1. 200 g baking flour
  2. 1 tsp baking power
  3. 135 ml of milk
  4. 100 g raisins
  5. 100 g brown sugar
  6. 1/2 tsp Mixed spices
  7. A pinch of salt
  8. 1 Big Egg beaten
  9. The zest of a lemon
  10. 75g butter
  11. 100 g raisins Sultans
For sweet icing
  1. 125 g sugar Glass
  2. 1/2 lemon juice
  3. Brown Sugar for cooking.
Instructions
  1. Well grease an 18cm cake tin and line the base with grease proof paper.
  2. Sieve together the flour, salt and spice, rub in the butter whith a mix in an electric mixer. Add the sugar, raisins and sultanas. Add the egg and milk so that the mixture drops from a spoon when shaken.
  3. Turn the mixture into your cake tin cover with a light layer of the crunchy brown sugar on top and bake in a pre heated oven for an hour or until the cake is golden and a skewer comes out clean when inserted into the middle of the cake.
  4. When baked leave in the tin for five minutes before turning out onto a wire rack to cool.
