Hoy quiero compartir con todos vosotros la receta de esta maravillosa tarta. Es distinta a todas y seguro que os encantarĂ¡ tanto como a mĂ­.

La verdad es que desde que vivo en Inglaterra me estoy aficionando a la pastelerĂ­a y a todo tipo de dulces y cada vez me gusta mĂ¡s hacerlos.

Esta tarta es finĂ­sima, fresca y elegante , ideal para servirla en ocasiones muy especiales.

La combinaciĂ³n del merengue seco con el limĂ³n y los pistachos verdes esta muy bueno!!!

Lemon curd, pistachos verdes y merengue

Para preparar el merengue de pistachos
  1. 320 gr azĂºcar sĂºper fino para reposterĂ­a ( no glass)
  2. 200 gr pistachos verdes
  3. 6 claras de huevo
  4. 1 vaina de vainilla o extracto de vainilla
  5. unas gotas de vinagre de vino blanco
Para el relleno
  1. 180 gr lemon curd
  2. 580 gr nata doble
Para preparar el lemon curd
  1. 180g de azĂºcar
  2. 100 g de mantequilla
  3. 3 huevos
  4. 1 yema de huevo
  5. Jugo de 3 limones grandes
  6. ralladura de 1 limĂ³n (opcional)
Instructions
  1. Preparar el lemon curd batiendo con las varillas elĂ©ctricas la mantequilla a temperatura ambiente con el azĂºcar durante un par de minutos.Agregar los huevos y la yema , de uno en uno, batiendo durante 30 segundos entre ellos.
  2. Pasar la crema a una cacerola y poner al fuego. No dejar de mover con una cuchara de madera y pasados unos segundos añadir el zumo de limĂ³n colado y la ralladura de limĂ³n.
  3. Cocer a fuego lento y no dejar de remover con la cuchara hasta que la mezcla quede suave y espesa, aproximadamente 10 minutos. Una vez que la crema haya cogido consistencia apartar del fuego y dejar enfriar.
  4. Precalentar el horno a 155ºC.
  5. Tostar en el horno a 180ºC los pistachos
  6. Mientras tanto preparar con papel de horno 3 discos de 18 cm de diĂ¡metro.
  7. Cuando los pistachos estén tostados retirar del horno y dejar enfriar sobre una bandeja.
  8. Separar 85 gr de pistachos y el resto triturarlos en el robot de cocina con 3 c.s. de azĂºcar ( en golpes de 3).
  9. Montar las claras de huevo a punto de nieve apretĂ¡ndolas poco a poco con el azĂºcar y a medio montar añadir la vainilla. Añadir los pistachos triturados y mezclar con ayuda de una espĂ¡tula.
  10. Introducir el merengue en una manga pastelera con boquilla lisa ancha y escudillar en forma de circulo sobre los 3 papeles de horno que tenemos preparados.
  11. Hornear a 155ºC durante 50 minutos.
  12. Apartar y dejar enfriar.
  13. Se conserva muy bien durante varios dĂ­as.
  14. Montar la nata doble y a medio montar añadir el lemon curd frío y seguir batiendo .
  15. Introducir en una manga pastelera con boquilla lisa y reservar en la nevera hasta la hora de montar la tarta.
  16. Disponer una base de merengue de pistachos, cubrirla con la crema de lemon curd, espolvorear unos pistachos troceados por encima. Cubrir con otro disco de merengue, crema de lemon curd y pistachos troceados y terminar con otra capa de merengue, crema de lemon curd y pistachos troceados.
  17. Decorar al gusto.

Good afternoon,

Today I want to share with all of you the recipe for this wonderful cake. It’s different from all of them and I’m sure you’ll love it as much as I do.

The truth is that since I live in England I am fond of pastry and all kinds of sweets and I like to make them more and more.

This cake is very fine, fresh and elegant, ideal to serve it on very special occasions.

The combination of dry meringue with lemon and green pistachios is very good!

Merengue and lemon cake

To prepare the pistachio meringue
  1. 320 gr super fine sugar for pastry (no glass)
  2. 200 gr green pistachios
  3. 6 egg whites
  4. 1 vanilla pod or vanilla extract
  5. a few drops of white wine vinegar
For the filling
  1. 180 gr lemon curd
  2. 580 gr double cream
For the lemon curd
  1. 180g white caster sugar
  2. 100g butter
  3. 3 large eggs
  4. 1 large egg yolk
  5. juice of 3 very ripe unwaxed lemons
  6. zest of 1 lemon
Instructions
  1. For the lemon curd beat the sugar and butter with an electric mixer in a large bowl until slightly lighter in colour, a couple of minutes will do.
  2. Add the eggs and yolk, one at a time. Transfer this into a medium sized saucepan.
  3. Get a wooden spoon and add the lemon juice in stirring continuously. Add the lemon zest .
  4. Place on a very low heat and keep stirring with the spoon until the mixture becomes smooth and thickens, about 10 minutes. You should feel some resistance against the spoon.
  5. Preheat the oven to 155ºC.
  6. Toast in the oven at 180ºC the pistachios
  7. Meanwhile prepare with baking paper 3 disks of 18 cm in diameter.
  8. When the pistachios are toasted remove from the oven and let cool on a tray.
  9. Separate 85 gr of pistachios and the rest crush them in the food processor with 3 c.s. of sugar (in strokes of 3).
  10. To mount the egg whites to point of snow tightening them little by little with the sugar and to half mount to add the vanilla. Add the crushed pistachios and mix with a spatula.
  11. Place the meringue in a pastry bag with a wide flat nozzle and circle in the form of a circle over the 3 oven papers that we have prepared.
  12. Bake at 155ºC for 50 minutes.
  13. Set aside and let cool.
  14. It keeps very well for several days.
  15. To mount the double cream and to half mount to add the cold lemon curd and to continue beating.
  16. Place in a pastry bag with a smooth nozzle and reserve in the fridge until the time to assemble the cake.
  17. Place a base of pistachios meringue, cover with lemon curd cream, sprinkle some pistachios chopped on top. Cover with another merengue platter, lemon curd cream and chopped pistachios and finish with another layer of merengue, lemon curd cream and chopped pistachios.
