Llevo días sin publicar receta porque he tenido una semana de locos con muchísimo trabajo pero ya estoy aqui!

Hoy quiero compartir con vosotros la receta de mi salpicón de marisco. Es exquisito y muy fácil de preparar. El rollo es cocer y limpiar el marisco así que debéis tener paciencia pero os aseguro que el resultado será de 10!

Para preparar el salpicón
  1. 300 grs langostinos limpios y cocidos.
  2. 2 bueyes de mar cocidos y limpios
  3. 1 bogavante de 600 g
  4. 1 cebolleta mediana
  5. 1/2 pimiento rojo
  6. 1/4 pimiento verde
  7. 3 huevos duros rallado.
  8. Perejil picado.
  9. 250 ml de aceite de oliva.
  10. 70 ml de vinagre de vino blanco.
  11. Sal.
Salsa tartara
  1. 170 ml salsa mahonesa.
  2. 1 huevo duro picado
  3. 35 gr alcaparras muy picadas
  4. 35 gr pepinillos muy picados
  5. 40 gr cebolleta muy picada.
  6. 1 c.c. mostaza dijón.
  7. Perejil picado y sal.
Instructions
  1. Cocer en agua hirviendo con sal y una hoja de laurel los langostinos 3 minutos desde que el agua rompe a hervir.
  2. Cocer los bueyes de mar partiendo de agua fría sin están vivos con sal y unas hojas de laurel por kilo de peso 20 minutos.
  3. Cocer el bogavante 8 minutos aprox .
  4. Retirar los mariscos del agua de la cocción una vez cocidos y dejarlos enfriar a temperatura ambiente sobre una bandeja.
  5. Una vez frío el marisco proceder a limpiarlo Cortar los langostinos en trozos pequeños, el cuerpo del bogavante y las pinzas.
  6. En un bol mezclar los 3 mariscos. Es importante que limpiéis muy bien los bueyes de mar y que aprovechéis los carros( caparazón). El carro es lo más importante que tienen los bueyes de mar.
  7. Picar muy bien la cebolleta, los pimientos y rallar el huevo duro.
  8. Mezclar el aceite de oliva con el vinagre y emulsionar con unas varillas de mano. Poner a punto de sal.
  9. Añadir los vegetales y mover el conjunto.
  10. Disponer el marisco en una bandeja profunda.Cubrir el salpicón con la vinagreta y perejil espolvorear perejil por encima.
  11. Si queréis podéis servirlo con salsa tártara.
  12. Para preparar la salsa tártara picar muy bien todos los ingredientes.
  13. Mezclarlos en un bol y añadir la mahonesa, la mostaza y sazonar. Servir bien fría.
COCCIÓN DEL MARISCO
  1. EL MARISCO SE CUECE EN AGUA FRÍA VIVO.
  2. SE CUECE EN AGUA CALIENTE MUERTO.
  3. el marisco se suele cocer partiendo de agua fría siempre y cuando sea marisco que tenga posibilidad de perder las patas, es decir, si el marisco está vivo se suele cocer en agua fría-
  4. centollo, buey, nécoras,
  5. La langosta se suele cocer si está viva en agua fría pero encontraaremos algunos sitios donde también lo hacen con agua hirviendo.
POR EJEMPLO
  1. • EL CAMARÓN, LA CIGALA, LANGOSTINOS, GAMBAS... SE CUECEN EN AGUA HIRVIENDO.
TIEMPOS DE COCCIÓN
  1. EL BOGAVANTE LO VAMOS A COCER ---- 18 MINUTOS POR KILO.
  2. LA LANGOSTA ----UNOS 20 MINUTOS POR KILO.
  3. EL PERCEBE-------AGUA HIRVIENDO BIEN SALADA Y METER, QUE VUELVA A HERVIR EL AGUA Y SACAR. Pocos percebes en el agua, cocerlo por tandas!!!!
  4. LA CIGALA-----AGUA HIRVIENDO 2 MINUTOS.
  5. CENTOLLO------ AGUA FRÍA 20 MINUTOS POR KILO.
  6. BUEY------ AGUA FRÍA 20 MINUTOS POR KILO.
  7. NECORA----AGUA BIEN FRÍA---7 MINUTOS.
  8. CAMARÓN—AGUA HIRVIENDO---SACAR CON EL PRIMER HERVOR.
  9. LANGOSTINOS—AGUA HIRVIENDO---2 MINUTOS.
  10. BÍGAROS----AGUA HIRVIENDO—METER Y SACAR.
  11. • EL CAMARÓN SE SACA CON EL PRIMER HERVOR Y SE COLOCA SOBRE LA MESA DE TRABAJO BIEN ESTIRADO Y SE ESPOLVOREA BIEN DE SAL GORDA Ó FINA YA QUE LE CUESTA MUCHO COGERLA.
  12. Se dice que los mejores mese son los que tienen la r , por ejemplo noviembre a marzo ya que los meses comprendidos entre mayo y agosto son los meses reproductores y lógicamente la mayoría de las especies pierden peso, sabor y textura.
  13. Sin embargo no todas las especies coinciden en los mismos meses reproductivos por lo que siempre hay alguna que se puede comer . además existen mariscos como la langosta que apenas pierde sabor y cuerpo durante su reproducción.
  14. En época de veda es un dato fiable para no comer marisco.
PESCADOS BLANCOS Y PESCADOS AZULES
  1. PESCADOS AZULES: SON LOS DE ALTO CONTENIDO GRASO.
  2. PESCADOS BLANCOS: POCO CONTENIDO GRASO.
  3. LOS PESCADOS BLANCOS TIENEN EN SUS CARNES MENOS DE UN 2 % DE GRASAY LOS AZULES LOS QUE TIENEN MAS DEL 5% Y SEMIBLANCOS LOS INTERMEDIOS.

I haven’t published a recipe for days but I’ve had a crazy week with a lot of work!

Today I want to share with you the recipe of my seafood salad. It is exquisite and very easy to prepare. The roll is to cook and clean the shellfish so you must have patience but I assure you that the result will be perfect!

To prepare the splash
  1. 300 GRS prawns, clean and cooked.
  2. 2 cooked and clean sea oxen
  3. 1 600 g lobster
  4. 1 medium chives
  5. 1/2 Red pepper
  6. 1/4 Green Pepper
  7. 3 hard, grated eggs.
  8. Chopped parsley.
  9. 300 ml of olive oil.
  10. 75 ml white wine vinegar.
  11. Salt.
Tartar sauce
  1. 170 ml mayonnaise sauce.
  2. 1 Hard boiled egg
  3. 35 gr very chopped capers
  4. 35 gr very chopped gherkins
  5. 40 gr very chopped chives.
  6. 1 C.C. Dijon mustard.
  7. Chopped parsley and salt.
Instructions
  1. Cook in boiling water with salt and a laurel leaf the prawns 3 minutes since the water breaks to boil.
  2. Cook the sea oxen from cold water without living with salt and laurel leaves per kilo of weight 20 minutes.
  3. Cook the lobster 8 minutes approx.
  4. Remove shellfish from cooking water once cooked and allow to cool at room temperature on a tray.
  5. Once the shellfish is cold, clean it by cutting the prawns into small pieces, the lobster body and the tongs.
  6. In a bowl mix the 3 shellfish. It is important that you clean the sea oxen very well and that you took advantage of the cars (shell). The cart is the most important thing the sea oxen have.
  7. Finely chop the chives, peppers and grate the hard egg.
  8. Mix olive oil with vinegar and emulsify with hand rods. Put salt on the point.
  9. Add the vegetables and move the whole.
  10. Arrange the shellfish on a deep tray. Cover the salad with the vinaigrette and parsley sprinkle parsley on top.
  11. If you want you can serve it with tartar sauce.
  12. To prepare the tartar sauce, chop all the ingredients very well.
  13. Mix in a bowl and add mayonnaise, mustard and season. Serve it cold.
