[:es]Ya que estamos en casa pasando la cuarentena publicaré durante estos días una receta al día que espero que os ayude a llevar un poquito mejor esta dura situación.

Carrilleras de cerdo con puré de manzana asada

Para preparar el fondo de carne oscuro
  1. 1 kg (aguja,morcillo...) de ternera troceado
  2. 1 zanahoria
  3. 1 cebolla
  4. 1/2 puerro ( la parte blanca y verde)
  5. 1 penca de apio
  6. 1/2 cabeza de ajo troceada
Para preparar las carrilleras de cerdo
  1. 18 carrilleras de cerdo
  2. 2 zanahorias
  3. 1 puerro
  4. 1 cebolla
  5. penca de apio
  6. 6 dientes de ajo aplastados
  7. romero, tomillo, salvia
  8. sal y pimienta blanca
  9. 3 c.s. maizena
Puré de manzana
  1. 4 manzanas golden
  2. 6 c.s. azúcar
  3. 6 c.s. mantequilla
  4. 150 ml vino blanco
Para preparar el fondo oscuro
  1. Rehogar la carne en un poco de aceite hasta dorarla muy bien. En el momento en que tenga un bonito color dorado PERO NO QUEMADO añadir toda la verdura troceada y rehogar hasta que todo el conjunto tenga color.
  2. Cubrir con agua y dejar hervir a fuego medio durante 1 hora.
  3. Colar y reservar hasta utilizar. LOS CALDOS nunca llevan sal!!
Para preparar las carrilleras
  1. Precalentar el horno a 130-140ºC
  2. En una olla de buen diámetro verter un poco de aceite de oliva.
  3. Añadir las carrilleras previamente salpimentadas, poco a poco, es decir, no las amontonéis y dorarlas por todos sus lados.
  4. Retirarlas y reservarlas en una bandeja ( ver video).
  5. En esa misma olla con un poco más de aceite si fuera necesario añadir toda la verdura cortada y rehogar hasta que coja color. Añadir las carrilleras y cubrir con el fondo de carne( caldo).
  6. Colocar un papel de horno sobre la carne e introducir en el horno durante 2 horas 15 minutos.
  7. Comprobad que están tiernas y retirar del horno. Dejar enfriar.
  8. Una vez frías retirar las carrilleras de la salsa y colocarlas en una olla limpia.
  9. Colar la salsa y ponerla a hervir. Disolver en un bol 3 c.s. de maizena con 7 c.s. de agua.
  10. Cuando la salsa esté hirviendo añadir la maizena y remover con una varilla.
  11. Añadir la salsa sobre las carrilleras y dejar al fuego 5 minutos. Apartar y reservar.
  12. Lavar las manzanas golden. Hacerles una pequeña incisión por la parte del rabito e introducir mantequilla y azúcar.
  13. Verter el vino blanco e introducir en el horno a 190ºC durante 20 minutos. Bajar la temperatura a 175ºC y hornear 30 minutos más.
  14. Retirar del horno y con ayuda de una batidora o en la termomix triturar las manzanas enteras añadiendo poco a poco el jugo que han soltado las manzanas en el horno. ( no es necesario añadir todo, iremos añadiendo hasta obtener una textura densa y cremosa).
  15. A la hora de servir si las carrilleras están frías ponerlas al fuego, dejar que rompan a hervir y rápidamente introducir en el horno a 190ºC durante 10-15 minutos. ( VER VIDEO PUBLICADO EN INSTAGRAN).
  16. De esta manera las glasearemos y quedarán crujientes por fuera y cremosas por dentro. Acompañad con el puré de manzana caliente.

Pork cheeks with roasted applesauce

To prepare the dark broth
  1. 1 kg (needle ...) of chopped veal
  2. 1 carrot
  3. 1 onion
  4. 1/2 leek (the white and green part)
  5. 1 celery stick
  6. 1/2 head of garlic chopped
To prepare the pork cheeks
  1. 18 pork cheeks
  2. 2 carrots
  3. 1 leek
  4. 1 onion
  5. celery stick
  6. 6 garlic cloves, crushed
  7. rosemary, thyme, sage
  8. salt and white pepper
  9. 3 c.s. cornstarch
Apple puree
  1. 4 golden apples
  2. 6 c.s. sugar
  3. 6 c.s. Butter
  4. 150 ml white wine
To prepare the dark broth
  1. Sauté the meat in a little oil until it is browned very well. At the moment it has a nice golden color BUT NOT BURNED add all the chopped vegetables and sauté until the whole set has color.
  2. Cover with water and boil over medium heat for 1 hour.
  3. Strain and reserve until used. The broth never carry salt !!
To prepare the cheeks
  1. Preheat the oven to 130-140ºC
  2. In a good diameter pot pour a little olive oil.
  3. Add the previously seasoned cheeks, little by little, that is, do not pile them up and brown them on all sides.
  4. Remove them and reserve them on a tray (see video).
  5. In that same pot with a little more oil if necessary, add all the cut vegetables and sauté until it is colored. Add the cheeks and cover with the meat bottom (broth).
  6. Place an oven paper on the meat and put in the oven for 2 hours 15 minutes.
  7. Check that they are tender and remove from the oven. Let cool.
  8. Once cold, remove the cheeks from the sauce and place them in a clean pot.
  9. Strain the sauce and bring it to a boil. Dissolve in a bowl 3 c.s. cornstarch with 7 c.s. of water.
  10. When the sauce is boiling add the cornstarch and stir with a rod.
  11. Add the sauce on the cheeks and leave on the fire for 5 minutes. Set aside and reserve.
  12. Wash the golden apples. Make a small incision in the tail part and add butter and sugar.
  13. Pour the white wine and put in the oven at 190ºC for 20 minutes. Lower the temperature to 175ºC and bake 30 minutes more.
  14. Remove from the oven and with the help of a blender or in the thermomix, crush the whole apples, gradually adding the juice that the apples have released in the oven. (It is not necessary to add everything, we will add to obtain a dense and creamy texture).
  15. At the time of serving if the cheeks are cold, put them on the fire, let them boil and quickly put them in the oven at 190ºC for 10-15 minutes. (SEE VIDEO PUBLISHED ON INSTAGRAN).
  16. In this way we will glaze them and they will be crispy on the outside and creamy on the inside. Serve with the warm applesauce.
