Las de toda la vida y que siempre apetecen y más con el buen tiempo.

Lo más importante a la hora de hacer los pimientos asados es la temperatura del asado. Seguid la receta paso a paso y ya veréis lo bien y ricos que os van a quedar!!.

A mi me encanta servirlos con cogollitos, con esas hojas pequeñas, crujientes y apretadas y ligeramente más rizadas que las hojas de la lechuga romana.

Para preparar los pimientos rojos asados
  1. 3 pimientos rojos para asar
  2. 85 ml aceite de oliva 1º
  3. 150 ml agua
  4. sal
  5. Aceite de oliva 1º
  6. 6 cogollos o 12 si son pequeños
  7. 18 anchoas de Santoña
Aliño
  1. 180 ml aceite de oliva virgen variedad Arbequina
  2. 55 ml vinagre de jerez
  3. sal
  4. Papel de aluminio Albal
  5. Bolsa de plástico
Instructions
  1. Precalentar el horno a 185ºC.
  2. Lavar los pimientos rojos. Secarlos y disponerlos en una bandeja de horno algo profunda y pequeña.
  3. Sazonar los pimientos, añadir el aceite y a continuación el agua.
  4. Hornear en el medio del horno durante 30 minutos.
  5. Comprobad en todo momento que la bandeja tiene jugo ( del aceite y del agua). Si no fuera así añadir un poco más de aceite y de agua.
  6. Cuando los pimientos empiecen a coger color y la piel se empieza a arrugar darles la vuelta y dejarlos 15 minutos más.
  7. Bajar la temperatura del horno a 160ºC y hornear 35 minutos más aprox.
  8. Los pimientos en este momento deberán estar asados, con un bonito color dorado y con la piel muy arrugada y brillante.
  9. Retirar del horno e introducir los pimientos y el jugo del asado en una bolsa de plástico y hacerle un nudo a la bolsa para que todo el vapor del asado quede en la bolsa y de esta manera una vez fríos los pimientos sea muy fácil pelarlos.
  10. Mientras tanto limpiar los cogollos y sacar las anchoas de la nevera para que se vayan atemperando.
  11. Es muy importante que a la hora de servir las anchoas no estén muy frias!!.
  12. Preparar el aliño combinando en un bol el aceite de oliva con el vinagre de jerez y la sal. Mezclar con ayuda de una varilla y reservar en la nevera hasta la hora de servir.
  13. Pelar los pimientos rojos, retirarles las pepitas y cortarlos en tiras anchas. Colar el jugo del asado y poner a punto de sal si fuera necesario.
  14. Ir colocando los pimientos en una bandeja honda eir añadiendo un poco del jugo del asado y aceite de oliva 1º. ( Así es como debéis conservar los pimientos en la nevera). Se conservan muy bien durante 5-6 días.
  15. A la hora de servir disponer 1 o 2 cogollo por persona ( ver foto), los pimientos rojos asados y las anchoas de Santoña. Aliñar ligeramente y a disfrutar!!!

To prepare the roasted red peppers
  1. 3 red peppers for roasting
  2. 85 ml olive oil 1º

  6. 6 buds or 12 if they are small

Dressing
  1. 180 ml virgin olive oil variety Arbequina
  2. 55 ml sherry vinegar
  3. Salt
  4. Albal Aluminum Foil
  5. Plastic bag
Instructions
  1. Preheat the oven to 185ºC.
  2. Wash the red peppers. Dry them and place them on a somewhat deep cookie sheet.
  3. Season the peppers, add the oil and then the water.
  4. Bake in the middle of the oven for 30 minutes.
  5. Check at all times that the tray has juice (from oil and water). If not, add a little more oil and water.
  6. When the peppers begin to take color and the skin begins to wrinkle, turn them over and leave them for 15 more minutes.
  7. Lower the oven temperature to 160ºC and bake 35 minutes more approx.
  8. The peppers at this time should be roasted, with a beautiful golden color and with very wrinkled and shiny skin.
  9. Remove from the oven and put the peppers and the juice from the roast in a plastic bag and tie the bag in a knot so that all the steam from the roast remains in the bag and this way, once the peppers are cold, it is very easy to peel them.
  10. Meanwhile clean the buds and remove the anchovies from the fridge so that they become tempered.
  11. It is very important that when serving the anchovies are not too cold !!.
  12. Prepare the dressing by combining the olive oil with the sherry vinegar and the salt in a bowl. Mix with the help of a rod and reserve in the fridge until serving time.
  13. Peel the red peppers, remove the seeds and cut them into wide strips. Strain the juice from the roast and add salt if necessary.
  14. Place the peppers on a deep tray and add a little of the juice from the roast and olive oil 1º. (This is how you should keep the peppers in the fridge). They keep very well for 5-6 days.
  15. At the time of serving have 1 or 2 bud per person (see photo), roasted red peppers and anchovies from Santoña. Dress lightly and enjoy!
