[:es]Esta ensalada de bogavante es exquisita!.

La vinagreta de tomate con trufa le va de maravilla al bogavante. Lo calentaremos en el horno, le daremos ese toque tan especial de textura y de sabor que buscamos. Los espárragos verdes los dejaremos al dentes y en la base pondremos unos canónigos, berros o micro Mezclum!!

Ya veréis que delicia, ideal para servir en ocasiones especiales!!

Ensalada tibia de bogavante con espárragos verdes y vinagreta de tomate

Para preparar el bogavante
  1. 1 bogavante de 1.600 kg o 3 bogavantes de 500 g
  2. sal gorda
  3. laurel
Para la ensalada
  1. Canónigos o micro Mezclum
  2. 3 tomates rojos de rama
  3. 1 manojo cebollino
  4. 300 ml aceite de oliva virgen
  5. 100 ml vinagre de jerez
  6. Sal y pimienta de molino
  7. 40 g pasta de trufa
16 espárragos grandes y verdes
  1. 20 g azúcar + 20 g sal + bicarbonato
Instructions
  1. Cocer el bogavante en agua fría con sal gorda y laurel ( ver video).
  2. Calcular por kilo de peso 7 minutos desde que el agua rome a hervir.
  3. Si el bogavante pesa 500 g calcular 5 minutos de cocción desde que el agua rompe a hervir.
  4. Retirar del agua y reservarlo sobre una bandeja al fresco!!. Cuanto antes enfrie mejor.
  5. LIMPIAR Y CORTAR EL BOGAVANTE SIGUIENDO LAS INDICACIONES DEL VIDEO.
  6. Cocer los espárragos troceados en agua hirviendo durante 1 minuto con la misma cantidad de sal que de azúcar y añadir un poco de bicarbonato para mantener el color verde de los espárragos. Retirar del agua y enfriarlos rápidamente.
  7. Pelar los tomates, retirarles las pepitas y cortarlos en dados muy pequeños.
  8. Picar el cebollino.
  9. En un bol mezclar el aceite de olva virgen Arbequina con el vinagre de Jerez, añadir la sal y la pimienta y emulsionar con la varilla. Añadir el cebollino, los tomates, la pasta de trufa y mezclar.
  10. Reservar en la nevera hasta la hora de utilizar. Es importante que a la hora de servir la ensalada LA VINAGRETA NO ESTÉ MUY FRÍA!!
  11. Precalentar el horno a 190ºC.
  12. Extender el bogavante sobre un plato, aliñar ligeramente con la vinagreta y hornear durante 3-5 minutos.
  13. En el plato elegido disponer un molde de 8 cm de diámetro. En la base disponer canánigos, a continuación un poco de vinagreta de tomate, trozos de bogavante, aliño del asado del bogavante, espárragos verde que los tendremos a temperatura ambiente y en el centro colocar una pinza del bogavante ( ver video). Aliñar de nuevo la ensalada y servir con dados de tomate alrededor y flores comestibles.

To prepare the lobster
  1. 1 lobster of 1,600 kg or 3 lobsters of 500 g
  2. fat salt
  3. laurel
For the salad
  1. micro Mezclum
  2. 3 red tomatoes
  3. 1 bunch chives
  4. 300 ml virgin olive oil
  5. 100 ml sherry vinegar
  6. Salt and mill pepper
  7. 40 g truffle paste
16 large green asparagus
  1. 20 g sugar + 20 g salt + bicarbonate
Instructions
  1. Cook the lobster in cold water with coarse salt and bay leaf (see video).
  2. Calculate per kilo of weight 7 minutes from when the water starts to boil.
  3. If the lobster weighs 500 g, calculate 5 minutes of cooking from when the water starts to boil.
  4. Remove from the water and reserve it on a tray al fresco !!. The sooner it cools the better.
  5. CLEAN AND CUT THE LOBSTER FOLLOWING THE INDICATIONS OF THE VIDEO.
  6. Cook the chopped asparagus in boiling water for 1 minute with the same amount of salt as sugar and add a little bicarbonate to maintain the green color of the asparagus. Remove from the water and cool quickly.
  7. Peel the tomatoes, remove the seeds and cut them into very small cubes.
  8. Chop the chives.
  9. In a bowl mix the Arbequina virgin olive oil with the sherry vinegar, add the salt and pepper and emulsify with the rod. Add the chives, tomatoes, truffle paste and mix.
  10. Reserve in the fridge until ready to use. It is important that when serving the salad THE VINEGAR IS NOT VERY COLD !!
  11. Preheat the oven to 190ºC.
  12. Spread the lobster on a plate, lightly season with the vinaigrette and bake for 3-5 minutes.
  13. In the chosen dish, place a 8 cm diameter mold. In the base, arrange the lamb's lettuce, then a bit of tomato vinaigrette, lobster pieces, the lobster roast dressing, green asparagus that we will have at room temperature and in the center place a lobster clamp (see video). Dress the salad again and serve with tomato cubes around it and edible flowers.
