[:es]Ahora que empieza el buen tiempo nos apetece cuidarnos un poquito más verdad?. Pues aquí tenéis esta ensalada que es muy original y exquisita!

Lo más importante es que los rabanitos y el hinojo estén cortados muy muy finos. La combinación de estos dos ingredientes con el queso azúl y con el toque de estragón es divina!!!

Ensalada verde con rabanitos, hinojo y queso azúl

Para preparar la ensalada
  1. Picatostes de pan tostado al horno con aceite de oliva
  2. 1 bulbo de hinojo no muy grande
  3. 8 rabanitos
  4. 60 g nueces tostadas
  5. Hojas de rúcula
  6. Ensalada micro Mezclum
  7. 120 g queso azúl ( Stilton)
  8. Estragón fresco picado
Para el aliño
  1. 25 ml zumo de limón
  2. 25 ml vinagre de jerez
  3. 1 diente de ajo machacado
  4. 150 ml aceite de oliva virgen
  5. sal y pimienta negra de molino
Instructions
  1. Precalentar el horno a 180ºC.
  2. Preparar el aliño mezclando en un bol el zumo de limón con el vinagre de jerez , el ajo, la sal y la pimienta negra.
  3. Poco a poco ir añadiendo el aceite mientras emulsionamos la mezcla con las varillas de mano.
  4. Poner a punto de sal y reservar en la nevera hasta la hora de utilizar.
  5. Con ayuda de la mandolina o cortadora de fiambres cortar el bulbo de hinojo lo más fino que os sea posible. haced lo mismo con los rabanitos.
  6. En dos boles que tendremos preparados con agua fría y mucho hielo disponer los rabanitos y el hinojo.
  7. Dejar en el agua fría durante un mínimo de 20 minutos.
  8. Esto es importante que lo hagáis antes de servir la ensalada.
  9. De esta manera los rabanitos y el hinojo estarán súper crujientes y fresquísimos!!!
  10. Tostar las nueces troceadas en el horno hasta que cojan un color dorado bonito.
  11. Trocear el queso.
  12. A la hora de servir trocear la mitad del queso y disponerlo en un bol. Añadir el hinojo y los rabanitos bien secos, la ensalada micro mezclum y aliñar. Terminar añadiendo parte de los picatostes de pan.
  13. Dividir la ensalada en los 4 platos elegidos y terminar añadiendo las hojas de rúcula, el resto de queso, picatostes de pan y las nueces troceadas.
  14. Añadir un hilo fino de aliño y refrescar con el estragón fresco picado.

  8. Tarragon fresh chopped
For the dressing
  1. 25 ml lemon juice
  2. 25 ml sherry vinegar
  3. 1 clove of crushed garlic
  4. 150 ml virgin olive oil
  5. Salt and black pepper from mill
Instructions
  1. Preheat the oven to 180 º C.
  2. Prepare the dressing by mixing in a bowl the lemon juice with the sherry vinegar, garlic, salt and black pepper.
  3. Gradually add the oil while emulsifying the mixture with the hand rods.
  4. Put on salt and reserve in the fridge until the time to use.
  5. With the help of the mandolin or slicer of cold cuts the fennel bulb as fine as you can. Do the same with the radishes.
  6. In two Boles we will have prepared with cold water and plenty of ice to dispose of the radishes and fennel.
  7. Leave in cold water for a minimum of 20 minutes.
  8. This is important that you do it before serving the salad.
  9. This way the radishes and fennel will be super crunchy and freshest!!!
  10. Toast the chopped walnuts in the oven until they catch a nice golden color.
  11. Chop the cheese.
  12. At the time of serving cut the half of the cheese and put it in a bowl. Add the fennel and the well dried radishes, the micro mezclum salad and dress. End up adding some of the bread croutons.
  13. Divide the salad among plates and finish by adding the arugula leaves, the rest of the cheese, croutons of bread and the chopped walnuts.
