[:es]Seguramente esta tatín de tomate sea la mejor tatín salada que he probado.

La combinación de la galleta crujiente de queso con el resto de los ingredientes es maravillosa.

Hoy las he preparado individuales pero cuando las hago para muchos las preparo en grande ( 24 cm aprox).

Ya veréis que fáciles son de preparar, lo único que tenéis que hacer es seguir la receta y tener paciencia, uno de los secretos para hacer una buena cocina!

Ingredients
  1. Para 6 tartaletas de 7-8 cm diámetro
  2. 4 tomates grandes maduros para forrar las tartaletas
  3. 800 g de tomates de pera en lata (sin líquido)
  4. 35 g de azúcar moreno
  5. 50 ml de aceite
  6. 2 dientes de ajo picados
  7. 1 hoja de laurel y una rama de tomillo
  8. sal
Para los pimientos del piquillo
  1. Pizca de curry
  2. 150 ml de pimientos del piquillo
  3. 40 ml vinagre de módena
  4. Una pizca de azúcar
  5. 2 latas de ventresca pequeñas (escurrida)
Pasta sablé de parmesano
  1. 100 g harina
  2. 100 g de parmesano rallado
  3. 100 g mantequilla
  4. 1 yema
  5. Una cucharada de agua
Instructions
  1. Para hacer la masa sable de parmesano, disponer la harina en forma de volcán y todos los ingredientes en el centro. Trabajar, dar forma de bola con la mano y dejar reposar en la nevera mínimo 30 minutos.
  2. También podéis prepararla en la amasadora con la pala.
  3. Para preparar la compota de tomate poner al fuego los tomates escurridos con el aceite, el azúcar, los ajos pelados y picados, el romero, el laurel y el tomillo. Cocer hasta que se evapore todo el líquido y quede un puré. Tardará 45 minutos. Retirar las hierbas. Escurrir y enfriar.
  4. Cortar los tomates previamente escaldados naturales en rodajas finas.
  5. Poner los pimientos en una sartén con el líquido de la lata, un chorrito de vinagre y una pizca de azúcar y curry. Cocer hasta que se evapore el líquido y se hayan caramelizado.
  6. A la hora de montar la tatin debéis engrasar las tartaletas.
  7. Forrar con las rodajas de tomate las paredes y la base. Rellenar con el puré de tomate, encima los pimientos y a continuación la ventresca.
  8. Cubrir con la sablé de queso bien estirada y hornear a 180ºC 30 minutos.
  9. Servir con una ensaladita de Mezclum aliñada con vinagre de Modena.
  10. Disfrutadla, es un súper plato!!!

  2. 100 g grated Parmesan
  3. 100 g butter
  4. 1 yolk
  5. A spoonful of water
