[:es]Muchos de vosotros estaréis pensando que hacer unas buenas lentejas es muy fácil… yo no lo creo, creo que como todo necesitan su tiempo y mimo e importantísimo también la variedad de lenteja que utilicemos.

Las lentejas que yo suelo cocinar son las pardina de tierra de campos, de Castilla León, me encantan por que su piel es muy fina y tierna y no se desprende durante el cocinado. Su interior es maravilloso,mantecoso y muy cremoso en el paladar.

La receta que hoy voy a compartir con todos vosotros me la enseño a hacer hace muchos años Victor, jefe de cocina y responsable en aquel entonces de toda la zona de camarotes y banquetes del conocido y maravilloso restaurante Cabo Mayor.

Veréis que sencilla es y lo deliciosas que os quedarán las lentejas!!!

Para preparar las lentejas
  1. 1kg de lentejas tierra de Campos ( opcional)
  2. 1 cebolla
  3. 1 zanahoria
  4. 3 dientes ajo
  5. 1 penca de apio verde
  6. 1 puerro, la parte blanca
  7. un manojo de perejil
  8. 1 hueso de jamón ibérico
  9. 3 chorizos de matanza( de guisar calidad extra)
  10. 2 morcillas ( calidad extra)
  11. aceite de oliva virgen
  12. Sal
Instructions
  1. Lo primero que deberéis hacer es lavar las lentejas.
  2. Una vez limpias disponerlas en una olla de buen fondo y cubrirlas con agua 4 dedos por encima de las lentejas e incorporar el hueso de jamón y un manojo de perejil.
  3. Ponerlas a hervir con un chorro de aceite de oliva virgen. Mientras tanto pelar y limpiar toda las hortalizas y picarlas muy bien con ayuda de un mini robot de cocina. Añadir a las lentejas y dejar coer a fuego medio alto durante 30 minutos.
  4. Veréis que pasada la media hora el agua estará casi a la misma altura que las lentejas, pues bien, en este momento volver a añadir agua, unos 3 vasos de agua a temperatura ambiente aprox.
  5. Las lentejas siempre deberán estar cubiertas de agua!
  6. Bajar el fuego y dejar cocinar a fiego medio bajo, tranquilamente pero siempre hirviedo durante 30 minutos más.
  7. Pasada la media hora probad y si están en su punto añadir los 3 chorizos enteros y las dos morcillas.
  8. Dejar cocer lentamente entre 10 y 15 minutos, moviendo la cazuela con movimientos de vaivén.
  9. Poner a punto de sal y retirar un cucharón grande de lentejas de la cazuela.
  10. Triturar muy bien las lentejas del cucharón hasta hacerlas crema y verter de nuevo en la cazuela.
  11. Con esto coseguiremos darle más cremosidad a las lentejas.
  12. Apartar del fuego y reservar mínimo 1 hora antes de servir.
  13. A la hora de servir calentar las lentejas, retirar el perejil si no se ha desecho y veréis que el chorizo y la morcilla habrán soltado parte de su grasa en las lentejas, que delicia!!!
  14. Cortar el chorizo y la morcilla con ayuda de un tenedor y de unas tijeras sobre las lentejas y así toda la grasa que aún tienen caerá encima de ellas!!

  11. virgin olive oil
  12. Salt
Instructions
  1. The first thing you should do is wash the lentils.
  2. Once clean, place them in a pot with a good bottom and cover them with water 4 fingers above the lentils and add the ham bone and a bunch of parsley.
  3. Bring them to a boil with a stream of virgin olive oil. Meanwhile, peel and clean all the vegetables and chop them very well with the help of a mini kitchen robot. Add to the lentils and cook over medium high heat for 30 minutes.
  4. You will see that after half an hour the water will be almost at the same height as the lentils, well, at this time add water again, about 3 glasses of water at room temperature approx.
  5. Lentils should always be covered in water!
  6. Lower the heat and leave to cook at low medium heat, quietly but always boiling for 30 more minutes.
