Pollo al curry con arroz basmati y pan Naan

Para preparar el curry
- 70ml aceite de girasol
- 4 c.s semillas negras de mostaza
- 2 cebollas rojas picadas
- 3 dientes de ajo picados
- 1 chilli verde, sin semillas y picado
- 50g jengibre
- 3 c.s pasta de jengibre y ajo
- 2 c.c chilli rojo en polvo
- 2 c.c cúrcuma molida
- 2 c.s cilantro molido
- 2 c.s comino molido
- 2 tomates rojos, en dados
- 130ml tomate passata
- 4 medias pechugas de pollo sin piel y en dados pequeños
- 400ml leche de coco
- Sal
Instructions
- Cortar la cebolla en trozos pequeños, el jengibre, el ajo y el chilli verde,( ver video en instagram).
- Rehogar todo en aceite de girasol y añadir las semillas de mostaza negra.
- Mezclar en un bol las especias y la pasta de jengibre y ajo. Aligerar con un poco de agua y verter sobre el sofrito.
- Dejar al fuego 5 minutos moviéndolo hasta dorar ligeramente y tostar.
- Añadir los tomates rojos en dados y dejar otros 5 minutos al fuego.
- Añadir los trozos e pollo, sazonar y rehogar durante 10 minutos.
- Verter la leche de coco y el tomate passata y dejar hervir al fuego durante 15 minutos.
- Poner a punto de sal y retirar del fuego.
- Servir con arroz basmati y pan Naan.
