[:es]Pocas cosas me pueden gustar más que las focaccias!!

Las puedes preparar de cualquier cosa pero eso sí, la masa de la focaccia tiene que ser riquisima!!

La receta que hoy os traigo es deliciosa, hacedla con tranquilidad y respetad las fermentaciones.

Hoy la he preparado de tomatitos cherry asados , queso de cabra y mucho romero.

Focaccia con queso de cabra, tomatitos asados y romero

Para preparar la masa
  1. 225 ml agua a temperatura ambiente aprox 26ºC.
  2. 4 gr de levadura seca ( liofilizada) de panaderia
  3. 55 ml aceite de oliva Bronze y Mora variedad Picual
  4. 385 g harina de fuerza
  5. sal
Para terminar
  1. 150 g queso de cabra
  2. sal maldon
  3. tomatitos cherry variados
  4. romero
  5. Aceite de oliva virgen Bronze y Mora Picual
Instructions
  1. En un bol batir el agua y la levadura. Esperar 30 segundo y volver a batir e incorporar el aceite.
  2. Ir añadirndo poco a poco la harina e ir mezclando con ayuda de una espátula de goma.
  3. Disponer el bol en el robot de cocina y con la herramienta de amasar trabajar la masa durante 3 minutos. Parar de amasar y dejar reposar la masa durante 15 minutos.
  4. Volver a amasar la masa y añadir la sal y trabajar 3 minutos más. Pincelar la masa con un poquito de aceite y cubrirla con film transparente. Dejarla reposar entre 45-60 min.
  5. Mientras tanto pincelar una bandeja de horno de 15X22cm con aceite de oliva virgen.
  6. Pasado el tiempo de fermentación, retirar el film de la masa y cubrirse las manos con aceite para poder retirar la masa con facilidad del bol.
  7. Introducirla en la bandeja de horno y con ayuda de los dedos presionar la hacia abajo dándole forma.
  8. Volver a pincelar la masa con aceite y cubrirla con film.
  9. Fermentar de nuevo durante 35 minutos.
  10. Retirar el film y con los dedos marcar la masa de la focaccia. Introducir en el horno a 220ºC durante 20 minutos. Bajar el horno a 190ºC y esparcir los tomatitos cherry por encima , el romero y la sal Maldon. Dejar 20 minutos más.
  11. Retirar del horno y aún caliente esparcir el queso de cabra por la superficie y servir caliente.

Basic Focaccia Dough
  1. 225 ml water at room temperature approx 26ºC.
  2. 4 gr dry yeast

  4. 385 g strong white bread flour
  5. salt
To conclude, the following
  1. 150 g cottage cheese
  2. salt Maldon
  3. Cherry tomatoes assorted
  4. Romero
  5. Olive oil Virgen Bronze and Mora Picual
Instructions
  1. In a bowl beat the water and the yeast. Wait 30 seconds and beat again and add the oil.
  2. Gradually add the flour and mix with a rubber spatula.
  3. Arrange the bowl in the kitchen robot and with the kneading tool work the dough for 3 minutes. Stop kneading and let the dough stand for 15 minutes.
  4. Knead the dough again and add the salt and work for another 3 minutes. Brush the dough with a little oil and cover with transparent film. Leave to stand for 45-60 min.
  5. Meanwhile brush a 15X22cm baking tray with virgin olive oil.
  6. Remove the film from the dough and cover the hands with oil so that the dough can be easily removed from the bowl.
  7. Put it into the oven tray and with the aid ofInsert it into the baking tray and with the help of your fingers press down to shape it.
  8. Brush the dough with oil and cover with film.
  9. Ferment again for 35 minutes.
  10. Remove the film and mark the seal dough with your fingers. Place in the oven at 220ºC for 20 minutes. Lower the oven to 190ºC and spread the cherry tomatoes on top, rosemary and salt Maldon. Leave 20 minutes more.
  11. Remove from oven and still warm spread goat cheese on the surface and serve hot.
