Preparadlos con tiempo, dejarlos fermentar bien y hornearlos durante 20 minutos.
Ya veréis que delicados y exquisitos son. Con una buena hamburguesa de ternera están de llorar!!!!

Buns con sésamo para hamburguesas

Para preparar los Buns
- 390 g harina de fuerza
- 80 ml agua
- 160 ml leche
- 38 g azúcar
- una pizca de sal
- 2.cta levadura seca en polvo
- 1 huevo
- 30 g mantequilla derretida y fría
- Sésamo blanco
- huevo batido
Para la hamburguesa
- 1 kg carne ( 60% ternera- 40 % cerdo)
- 1/2 cabolla
- 1 zanahoria pequeña
- 2 dientes de ajo
- aceite de oliva
- salsa perrins
- Sal y pimienta negra de molino
- 40 g parmesano rallado
Para acompañar
- Cebolla roja en láminas muy finas
- tomate rojo en rodajas
- lonchas de queso Emmental ( o el que más os guste)
- lechuga hoja de roble
- canónigos
- keptchup
- Mostaza...
Instructions
- Precalentar el horno a 200ºC.
- En el robot de cocina con la pala de amasar añadir todos los ingredientes y trabajar durante 10 minutos( ver video).
- Retirar la masa del bol del robot y trabajar unos minutos en la mesa de trabajo con un poco de harina. Darle forma de bola y dejar fermentar en un bol, hacerle con ayuda de unas tijeras unas insiciones en la superficie y cubrir con un paño de cocina.
- Dejar reposar durante 45 minutos ( DEBERÁ DOBLAR SU VOLUMEN).
- Pasado el tiempo y una vez fermentada la masa trabajarla un minuto de nuevo en la mesa de trabajo y bolear en pequeñas porciones de aprox 55g / bollito.
- Ponerlos de forma ordenada sobre una bandeja de horno y dejar fermentar de nuevo hasta que vuelvan a doblar su volumen.
- Pintar con huevo batido y espolvorear sésamo tostado por encima.
- Hornear durante 17 minutos aprox ( deberán quedar doraditos).
- Pochar la cebolla, zanahoria y ajo muy picado sin que coja color.
- Mientras tanto mezclar la carne con el resto de ingredientes y formar hamburguesas de 85g aprox.
- Marcar en una plancha o en una sartén con un poco de aceite hasta dorarlas por fuera pero dejándolas poco hechas por dentro.
- Disponer el queso Emmental encima de cada una y terminarlas en el horno durante 5 minutos aprox ( que el queso se empiece a fundir).
- Abrir con un cuchillo de sierra los bollitos de pan . Marcar las dos mitades de cada bollito en una sartén o plancha hasta dorar ligeramente.
- Terminar la hamburguesa con el resto de ingredientes y disfrutadla porque estará deliciosa!!!
