Rice with beacon, red prawns and seafood juice

Good afternoon !!!. The recipe that I want to share with you all today is very good, it is a dish that I learned to make work at the Club 31 restaurant in Madrid. We combine rice with beacon, carrots and zucchini and we will finish it in the oven.

We will prepare a wonderful broth with the heads of the carabinieri and you will see what a delight, you will love it !!!

To prepare the rice
For 4 people
  1. 240 g rice
  2. 100 g beacon
  3. 100 g carrot, chopped
  4. 100 g zucchini (part of the skin also) chopped
  5. salt and white mill pepper
  6. 570 g chicken broth
To prepare the seafood broth
  1. 4 red prawns
  2. 500 g little prawns
  3. 1 head of garlic with skin and in pieces
  4. olive oil
  5. 1 tomato, chopped
  6. Cornstarch + a little water to bind the seafood juice
  1. Prepare the seafood broth by sautéing the garlic head with the skin in olive oil. Add the heads of the red prawns, the shell of the body and the little prawns. Brown very well without burning. Add the chopped tomato and when everything is well sautéed and with a nice color add water to cover the whole.
  2. Boil for 40 minutes. Strain and reserve.
  3. Heat a little olive oil in a sauté or frying pan 24 cm in diameter. Add the beacon, stir for 30 seconds and then add the very chopped carrot. Saute for a few minutes, add the very chopped zucchini and finish adding the rice. Peel the rice for a couple of minutes and cover with the chicken broth. Add salt and move the whole. When it starts to boil, cover the rice (touching the broth) with baking paper and put it in the oven, which will be preheated to 190ºC for 18 minutes.
  4. Remove from the oven and let stand 5 minutes.
  5. Heat the seafood broth and bind it with a little cornstarch dissolved in water.
  6. Grind the salt point if necessary and strain.
  7. When serving, place an 8 cm diameter ring on each plate. Add the rice and arrange in the center a red prawn made on the plate with a little oil and salt.
  8. Pour around a little of the seafood broth and serve.
  9. Enjoy it, it's delicious !!!
