Espero que hayáis disfrutado del fin de semana. Hoy aquí en el Reino Unido es el día del padre y he preparado para comer unas deliciosas lentejas estofadas de primer plato y de plato principal he hecho el famoso fish cake de salmón que tanto le gusta a Manuel, mi marido.

La receta de hoy es exquisita y distinta, haremos unos pasteles individuales de patata con cebolleta, mostaza y salmón que están de muerte.

Seguir la receta paso a paso y ya veréis que bien os va a salir.

Cosas importantes a tener en cuenta:

1.El salmón debemos asarlo en el horno, sin piel y sin espinas ( lomos limpios).

2.Las patatas cocerlas con la piel en agua con una pizca de sal.

3.Es muy importante que una vez cocidas las patatas las escurráis muy bien, pelarlas en caliente y pasarlas rápidamente por el pasapuré.

4.El perejil y la cebolleta picarlo muy bien!!

Pastel de salmón con crema de cebollino y espinacas salteadas

Para preparar los pasteles
  1. 300 gr salmón limpio de piel y espinas en un solo trozo
  2. 250 gr patata cocida ( 400 gr patata aprox).
  3. 1 cebolleta fresca, la parte blanca muy picada
  4. 2 c.s. perejil picado
  5. 1 c.s. salsa worcestershire
  6. 15 gr mostaza Savora
  7. Unas gotas de tabasco
  8. Sal y pimienta blanca de molino
  9. 350 gr espinacas baby
  10. Aceite de oliva
  11. Sal
Para la crema de cebollino
  1. Un manojo de cebollino
  2. 300 ml nata 32% M.G
  3. Unas hojas de perejil
  4. Sal y pimienta negra de molino.
Para empanar
  1. Harina
  2. 2 Huevos batidos
  3. Pan rallado
  4. Aceite de girasol para freir
Instructions
  1. Lo primero que debemos hacer es asar el salmón con un poco de aceite, sal y pimienta a 180ºC durante 10 minutos.
  2. Es muy importante no asar demasiado el pescado, debe quedar en su punto.
  3. Retirar del horno y dejar enfriar.
  4. Mientras tanto cocer las patatas ( todas del mismo tamaño) con la piel en agua y sal.
  5. Una vez cocidas escurrir el agua, pelar y pasarlas en caliente por el pasapurés.
  6. Picar muy bien el perejil y la cebolleta.
  7. Disponer en un bol los vegetales , añadir el puré de patata, la mostaza, las salsas y la mitad del salmón previamente desmenuzado con ayuda de dos tenedores.
  8. Mezclar muy bien y poner a punto de sal y de pimienta. Añadir el resto del salmón desmenuzado y mezclar rápidamente.
  9. Llenar los aros elegidos( 6 cm de diámetro x 4 cm de alto) con el puré de salmón.
  10. Guardar los pasteles en la nevera mínimo 2 horas antes de empanar.
  11. En este momento los pasteles se podrán conservar bien cubiertos con film transparentes durante 2 días en la nevera!!.
  12. Terminar de preparar los pasteles de salmón empanándolos ( harina, huevo y pan rallado).
  13. Reservarlos en la nevera hasta la hora de servir.
  14. Saltear las espinacas baby en una sartén con aceite de oliva y añadir un poco de sal.
  15. Para preparar la salsa poner todos los ingredientes en un cazo al fuego.
  16. Dejar hervir a fuego medio durante 20 minutos. La nata debe reducir a la mitad.
  17. En ese momento triturar la salsa, colar y añadir unas gotas de zumo de limón.
  18. Si la salsa queda muy espesa podéis aligerarla con un poco de fumet de pescado.
  19. A la hora de servir freir los pasteles en abundante aceite de girasol( en la freidora si tenéis).
  20. Cuando estén dorados retirar del aceite y escurrir.
  21. En la base del plato disponer las espinacas salteadas, en el centro colocar el pastel y napar ligeramente con un poco de crema de cebollino.

To prepare the fishcakes
  1. 350 gr clean salmon of skin(leather) and thorns(bones) in an alone chunk
  2. 250 gr cooked potato (400 gr potato aprox).

  4. 3 c.s.leaves parsley chopped
  5. 1 c.s. sauce worcestershire
  6. 15 gr mustard Savora
  7. A few drops of tabasco
  8. Salt and white pepper of mil
  9. 350 gr spinach baby
  10. Olive oil
  11. Salt
For the cream of chive
  1. A bunch of chive chopped
  2. 300 ml doble cream 32 % M.G
  3. A few leaves (sheets) of parsley and stalks
  4. Salt and black pepper of mill.
To tarnish
  1. Flour
  2. 2 eggs
  3. Breadcrumbs
  4. Oil of sunflower for fry
Instructions
