[:es]Si os digo que es la primera vez después de casi dos años viviendo en Inglaterra que hago fish and chips?

He preparado fish and chips a mi manera y esta receta pasará a formar parte de mi recetario. Es muy buena y elegante, como me gustan a mí las recetas!!!

Ingredients
  1. 4 patatas Monalisa peladas y cortadas en bastones finos
  2. sal y aceite vegetal
Para preparar el pescado
  1. 4 filetes de 180 g de Haddock ( abadejo)
  2. 25 g harina
  3. ralladura de 1 limón
  4. sal y pimienta blanca
  5. 150 g pan Panko ( pan rallado japonés)
  6. 2 huevos batidos
Para preparar la salsa tartara
  1. 125 g mayonesa de calidad
  2. 25 g alcaparras mini
  3. 30 g pepinillos en vinagre
  4. perejil y estragón picado
  5. 15 gr mostaza Dijon
  6. 1 chalota pequeña muy picada
  7. sal
Para el puré de guisantes
  1. 200 g guisantes congelados
  2. 40 g mantequilla
  3. 5 hojas de menta picada
  4. sal
Instructions
  1. Preparar las patatas y pocharlas en abundante aceite de girasol durante 8 minutos. No deberán coger color pero si cocerse ligeramente ( pocharse).
  2. Escurrirlas muy bien y reservarlas bien estiradas sobre una bandeja forrada con papel de cocina.
  3. Para preparar el pescado en un bol mezclar la harina con la ralladura de un limón.
  4. Sazonar ligeramente el pescado, cubrirlo muy bien con la harina, retirar el exceso, pasar los filetes por huevo batido y para terminar empanarlos en el pan Panko.
  5. Reservar hasta la hora de servir.
  6. Preparar el puré de guisante cociendo los guisantes congelados en abundante agua HIRVIENDO con sal.
  7. Dejarlos 5 minutos, escurrirlos rápidamente e introducirlos en un bol que tendremos preparado con agua y hielo.
Dejarlos en el hielo durante 10 minutos, no más, escurrirlos bien y terminar de hacer el puré
  1. En un cazo calentar la mantequilla con unas gotas de aceite, añadir los guisantes y rehogar rápidamente. Triturar muy bien el conjunto y si quedase muy espeso el puré añadirle un poco de agua .
  2. Añadir la menta muy picada y poner a punto de sal.
  3. Preparar la salsa tartara combinando todos los ingredientes.
  4. A la hora de servir freír el pescado en abundante aceite de girasol ( 190ºC).
  5. Freír las patatas pochadas en aceite de girasol bien caliente (200ºC) hasta dorar. Sazonar.
  6. Calentar el puré de guisantes.
  7. Servir el pescado con la salsa tartara, el puré de guisantes y las patatas fritas.

Ingredients
  1. 4 Monalisa potatoes peeled and cut into fine canes
  2. Salt and vegetable oil
To prepare the fish
  1. 4 fillets of 180 g of Haddock (Pollack)
  2. 25 g flour
  3. Zest of 1 lemon
  4. Salt and white pepper
  5. 150 g Pan Panko (Japanese breadcrumbs)
  6. 2 beaten eggs
To prepare tartar sauce
  1. 125 g quality mayonnaise
  2. 25 g Capers Mini
  3. 30 g pickled gherkins
  4. Chopped parsley and tarragon
  5. 15 gr Dijon Mustard
  6. 1 small shallot very chopped
  7. Salt
For the puree of peas
  1. 200 g frozen peas
  2. 40 g butter
  3. 5 Leaves of chopped mint
  4. Salt
Instructions
  1. Prepare the potatoes and poach them in abundant sunflower oil for 8 minutes. They should not be colored but if cooked lightly (poaching).
  2. Drain them very well and reserve them well stretched on a tray lined with kitchen paper.
  3. To prepare the fish in a bowl, mix the flour with the zest of a lemon.
  4. Lightly season the fish, cover very well with the flour, remove the excess, pass the fillets by beaten egg and finish breading them in the Panko bread.
  5. Book until serving time.
  6. Prepare the pea purée by cooking the frozen peas in plenty of boiling water with salt.
  7. Leave them for 5 minutes, drain quickly and put them in a bowl that we will have prepared with water and ice.
Leave them on the ice for 10 minutes, no more, drain them well and finish the mashing
  1. In a saucepan heat the butter with a few drops of oil,Mash the whole well and if the purée is too thick add some water.
  2. Add the mint very chopped and put to salt.
  3. Prepare the tartara sauce by combining all the ingredients.
  4. At the time of serving fry the fish in abundant sunflower oil (190 º C).
  5. Fry the poached potatoes in hot sunflower oil (200 º C) until browned. Season.
  6. Heat the pea purée.
  7. Serve the fish with the tartar sauce, the mashed peas and the french fries.

  1. Hola Iria: ya noto lo contenta que estas en INGLATERRA , y me alegro mucho por toda tu familia que seguro que están también igual de contentos que tu, pero aquí, yo por lo menos te hecho mucho de menos pues me gustaba mucho ir a tus clases y aprender nuevas recetas.
