[:es]Según mis hijos éstas son las albóndigas más ricas del mundo!!!

Yo estoy de acuerdo, son exquisitas. Las he preparado con carne picada mitad de cerdo y mitad de ternera, cebollita y zanahoria pochada, huevo…

Aprovechad para hacerlas con los niños ahora que tenéis tiempo, disfrutarán como enanos!!!

Para preparar las albóndigas
  1. 1 k carne picada ( magro de cerdo y aguja de ternera)
  2. 1 cebolla
  3. 1 zanahoria
  4. 2 dientes de ajo
  5. 1 huevo
  6. sal y pimienta negra de molino
Para preparar la salsa
  1. 1 cebolla
  2. 1 puerro
  3. 1 zanahoria
  4. 2 dientes deajo
  5. 1 penca de apio
  6. aceite de oliva
  7. 500 ml caldo de carne ( ver receta carrilleras)
  8. 100 ml tomate en dados sin pepitas
  9. 45 g tomate doble
  10. Aceite de oliva
  11. Romero, tomillo
  12. sal
Para preparar la pasta
  1. 600 g espaguetis integrales
  2. Aceite de oliva
  3. Sal
Instructions
  1. Para preparar las albóndigas picar la cebolla, zanahoria y los dientes de ajo. En una sartén pequeña con un poco de aceite de oliva pochar muy bien el conjunto.
  2. Por otro lado en un bol grande mezclar la carne picada con un huevo, sal, pimienta y la verdura previamente rehogada, escurrida y fría.
  3. Hacer bolas del tamaño deseado y pasarlas por harina.
  4. En una cazuela grande calentar un poco de aceite de oliva virgen.
  5. Añadir las albóndigas sin amontonarlas. Darles la vuelta y cuando estén doradas por todos sus lados ir retirándolas. Las albóndigas no las hagáis demasiado, debemos terminarlas en la salsa!
  6. En esa olla, con ese mismo aceite " medio sucio" y si fuera necesario añadir un poco más añadir la zanahoria, apio, cebolla, puerro...todo muy bien picado.
  7. Rehogar a fuego medio bajo, es importante que no coja color.
  8. Cuando el conjunto esté bien pochado añadir el tomate en dados, sin piel y sin pepitas y dejar 10 minutos más. Incorporar el tomate doble y las albóndigas.
  9. Mover con movimientos de vaivén y para terminar añadir el romero, tomillo y cubrir ligeramente con el caldo de carne.
  10. Dejar al fuego 10 minutos y poner a punto de sazonamiento.
  11. Mientras tanto cocer los espaguetis integrales en abundante agua hirviendo con sal.
  12. Verter la pasta una vez cocida y muy bien escurrida rápidamente sobre las albóndigas.
  13. Mezclar con cariño y listas para comer!!

o prepare the meatballs
  1. 1 k minced meat (lean pork and beef needle)
  2. 1 onion
  3. 1 carrot
  4. 2 cloves of garlic
  5. 1 egg
  6. salt and black mill pepper
To prepare the sauce
  1. 1 onion
  2. 1 leek
  3. 1 carrot
  4. 2 cloves of garlic
  5. 1 celery stick
  6. olive oil
  7. 500 ml meat broth (see recipe cheeks)
  8. 100 ml diced tomato without seeds
  9. 45 g double tomato
  10. Olive oil
  11. Rosemary, thyme
  12. Salt
To prepare the pasta
  1. 600 g whole wheat spaghetti
  2. Olive oil
  3. Salt
Instructions
  1. o prepare the meatballs, chop the onion, carrot and garlic cloves. In a small frying pan with a little olive oil, fry the whole well.
  2. On the other hand, in a large bowl mix the minced meat with an egg, salt, pepper and the previously sautéed vegetables, drained and cold.
  3. Make balls of the desired size and pass them through flour.
  4. In a large saucepan heat a little virgin olive oil.
  5. Add the meatballs without stacking them. Turn them over and when they are golden brown on all sides, remove them.
  6. In that pot, with the same "half dirty" oil and if necessary add a little more add the carrot, celery, onion, leek ... all very well chopped.
  7. Saute over medium low heat, it is important that it does not take color.
  8. When the whole is well poached add the diced tomato, without skin and without seeds and leave 10 minutes more. Incorporate the double tomato, mix and the meatballs with all their juice.
  9. Move with reciprocating movements and to finish add the rosemary, thyme and cover lightly with the meat stock.
  10. Leave on the fire for 10 minutes and prepare to season.
  11. Meanwhile cook the whole spaghetti in plenty of boiling salted water.
  12. Pour the pasta once cooked and very well drained quickly on the meatballs.
  13. Lovingly mix the set and voila!

According to my children these are the richest meatballs in the world !!!

I agree, they are delicious. I have prepared them with minced meat half pork and half veal, onion and poached carrot, egg ...

Take advantage to do them with the children now that you have time, they will enjoy like dwarfs !!!
