This is one of the best fideua recipe in the world!!!

Almonds give it a special touch.

Fish Fumet
  1. Sunflower oil.
  2. 1 kilo of rock fish
  3. 600 gr of onion, carrot, leek and very chopped celery
  4. 500 Grs of Crabs
  5. 6 crushed garlic cloves
  6. 1 kilo of red tomatoes in rooms
  7. Laurel, Thyme
  8. 1 C.S. Black pepper in grain
  9. 1 chili pepper
  10. 5 Litres of water

Sauté to prepare the FIDEUA
  1. 60 GRS of olive oil
  2. 6 chopped garlic cloves
  3. 80 gr chopped almonds
  4. 500 gr of tomato in Concasse
  5. Salt
Noodles
  1. 500 gr Noodle N º 0
  2. Sunflower oil.
  3. 30 Prawn Tails
Preparación
  1. To prepare the broth the first thing we must do is to clean the rock fish.
  2. Heat the oil, brown the carrot and onion and add the crabs and galleys, stir and add the rock fish, stir and add the garlic, bouquet garni, chilli and black pepper. Fry the whole and finally add the tomato.
  3. Fry the set for 10 minutes and wet with water. Let it cook for about 2 hours. Strain and pass through the cheesecloth.
  4. To prepare the frying, heat the oil, sauté the garlic and almonds, add the tomato and salt. Leave the fire until all the vegetation water evaporates.
