La receta de hoy es maravillosa!!!

Debéis comprar unas supremas de salmón hermosas, con un buen grosor para evitar que se sequen durante el asado.

Utilizad para esta receta las verduras y hortalizas que más os gusten, saltearlas primero como os lo muestro en el video y terminarlas en el horno a modo «papillote».

Salmón en papillote con salsa Bearnesa

Para preparar el papillote de salmón
  1. 4 Supremas de salmón sin piel y sin espinas de 120g ración
  2. sal y pimienta negra de molino
  3. 4 carabineros, langostinos tigre, gambón...
Para lsa verduras
  1. Patatitas de ración cocidas con piel 7 minutos en agua, aceite y sal.
  2. 1/ 2 calabacín en rodajas gruesas
  3. 2 zanahorias troceadas y peladas cortadas entrozos grandes ( ver video) y cocidas 8 minutos en agua, sal y pimienta blanca.
  4. 1 pimiento verde italiano
  5. 12 tomatitos cherry de rama bien maduros
  6. 8 espárragos verdes
  7. 4 alcachofas laminadas
  8. 1 manojos de ajetes tiernos
  9. aceite de oliva virgen
  10. Sal y pimienta de molino
Para preparar la salsa Bearnesa
  1. 80 ml vinagre de vino blanco
  2. Estragón fresco
  3. 1 chalota grande picada
  4. 3 yemas de huevo
  5. 250 g mantequilla
  6. sal y pimienta de molino
Para terminar
  1. Harina + agua
  2. papel de horno
Instructions
  1. Para preparar la salsa bearnesa lo primero que debemos hacer es derretir a fuego muy bajito la mantequilla.
  2. Una vez derretida apartar del fuego y colarla por una estameña( colador de tela).
  3. Poner al fuego en un cazo muy pequeño el vinagre de vino blanco con el estragón y la chalota picada. Dejar que el vinagre reduzca a un poco más de la mitad. Apartar y colar.
  4. Mezclar en un bol las 3 yemas de huevo con el vinagre reducido y poco a poco añadir 1/3 de la mantequilla clarificada sin dejar de batir con una varilla de mano ( ver video).
  5. Tener preparado al fuego un cazo con un poquito de agua , tipo baño Maria y disponer el bol de las yemas sobre el cazo y terminar de añadir el resto de mantequilla sin dejar de batir como podeis ver en el video hasta que la salsa espesa.
  6. Apartar en ese momento del fuego el cazo con el bol y picar estragón. Añadirselo a la salsa y poner a punto de sal y de pimienta negra de molino.
  7. Retirar del cazo tipo baño Maria y RESERVAR CERCA DEL CALOR DE LA COCINA HASTA LA HORA DE SERVIR!!
  8. Saltear todas las hortalizas elegidas con un poco de aceite de oliva. Salpimentar.
  9. A la hora de preparar el papillote seguir las indicaciones del video y hornear durante 25 minutos a 185ºC.
  10. Retirar del horno , abrir el papillote en la mesa a la vista de todos los comensales y servir con la salsa Bearnesa.

  4. 3 egg yolks

Instructions
  1. To prepare the bearnaise sauce, the first thing to do is melt the butter over a low heat.
  2. Once melted, remove from the heat and strain it through a cheesecloth (cloth strainer).
  3. Put the white wine vinegar with the tarragon and the minced shallot in the fire in a very small saucepan. Let the vinegar reduce to just over half. Set aside and strain.
  4. Mix in a bowl the 3 egg yolks with the reduced vinegar and gradually add 1/3 of the clarified butter while continuing to beat with a hand stick (see video).
  5. Have prepared a saucepan with a little water, a double boiler, on the fire and arrange the bowl of the yolks on the saucepan and finish adding the rest of the butter while continuing to beat as you can see in the video until the sauce thickens.
  6. At that moment remove the saucepan from the fire with the bowl and chop the tarragon. Add it to the sauce and add salt and black pepper mill.
  7. Remove from the Maria bath pot and BOOK CLOSE TO THE HEAT OF THE KITCHEN UNTIL TIME TO SERVE !!
  8. Sauté all the chosen vegetables with a little olive oil. Season with salt and pepper.
  9. When preparing the papillote follow the instructions on the video and bake for 25 minutes at 185ºC.
  10. Remove from the oven, open the papillote on the table in full view of all diners and serve with the Bearnaise sauce.
