[:es]El secreto de este caldo es hacerlo con mucho cariño y despacito…
El caldo blanco de pollo no falta nunca en mi cocina. Hacerlo con paciencia, que hierva bastantes horas y ya veréis el resultado.
Lo podéis utilizar en infinidad de platos como arroces, sopas, cremas, guisos…
Hoy lo vamos a hacer para preparar una sopa de pasta de piñones muy especial!!

Mi caldo de pollo

Ingredients
- Es el líquido de color blanco, basado en el empleo de restos crudos de carne.
- 1kg carcasas de pollo.
- 2 muslos de pollo sin piel
- 6 alas de pollo
- 1 pastilla de caldo de pollo ( la marca que más os guste)
- 2 rama de apio.
- 1 cebolla grande en trozos.
- 1 puerros en trozos.
- 2 zanahorias.
- 5 dientes de ajo
- Perejil fresco ( parte del tallo)
- 4 champiñones en trozos grandes
- 85 g higado de pato ( foie ) o micuit de foie
- 6 litros de agua...
Instructions
- Limpiar las carcasas de pollo lavándolas muy bien , retirar la piel a los muslos de pollo y pelar, lavar y cortar en trozos gruesos toda la verdura.
- Poner al fuego todos los ingredientes.
- Dejar hervir, retirar con ayuda de un colador la espuma que salga en la superficie ( serán las impurezas del pollo) y bajar el fuego.
- El caldo deberá hervir a borbotones lentos pero SIN DEJAR DE HERVIR durante un mínimo de 3 horas desespumando de vez en cuando.
- Cuando el caldo haya reducido casi a la mitad añadir 1 litro de agua aproximadamente y seguir dejándolo al fuego hasta que hayan pasado las 3 horas aproximadamente. En ese momento tendremos más o menos 3.5 l-4 litros de caldo!!
- Retirar del fuego y dejar reposar antes de colar durante 30 minutos.
- Colar y reservar hasta utilizar.
- Se puede congelar una vez frío.
- A la hora de preparar la sopa poner el caldo que vayamos a necesitar en una olla al fuego.
- dejar hervir lentamente durante 10 minutos aprox( con esto lo que haremos es reducirlo ligeramente y de esta manera ganará en sabor). Subir el fuego, añadir la pasta elegida y dejar hervir hasta que la pasta esté al dente. Poner a punto de sal.
- Los caldos en cocina nunca llevan sal. La sal se les pone en el último momento.
- Es importantísimo en todos los fondos de cocina ir retirándole la espuma que suelta sobre todo en la primera media hora de cocción para conseguir al final buenos resultados y un caldo muy limpio.

Ingredients

Instructions

- Put all the ingredients on the fire.

- The broth should boil slowly but NOT STOPPING BOILING for a minimum of 3 hours, skimming from time to time.
