No sé que tiempo hará en donde vosotros vivís pero lo que si os puedo decir es que aquí en Madrid hace un frío horroroso así que me he puesto a hacer croquetas por que hoy no pienso salir de casa!!

Esta bechamel para croquetas es maravillosa, las cantidades de leche, harina y mantequilla son perfectas para conseguir una bechamel suave y fina. Una de las cosas más importantes que debéis tener en cuenta a la hora de hacer las croquetas es el tiempo de cocción de la bechamel.

Seguir la receta paso a paso y ya veréis como a partir de ahora haréis siempre estas croquetas!!!

Croquetas de jamón ibérico

Para preparar la bechamel de croquetas
  1. 1 litro de leche
  2. 125 g mantequilla
  3. 130 g harina
  4. sal
  5. 180 g jamón ibérico muy picado
Para empanar
  1. Harina
  2. 2 huevos batidos
  3. pan rallado
  4. Aceite de oliva 1 º
Instructions
  1. En una olla de 23 cm de diámetro disponer al fuego la leche, la harina y la mantequilla y no dejar de remover con una varilla hasta que rompa a hervir. Bajar el fuego y dejar hervir a fuego medio durante 25 minutos removaiendo muy a menudo.
  2. Pasado el tiempo añadir el jamón ibérico muy picado y dejar 20 minutos más. Poner a punto de sal y retirar del fuego. Extender la bechamel sobre una bandeja de 30x30cm y cubrir a ciegas con film transparente( tocando la bechamel con el film.
  3. Dejar enfriar y reservar en la nevera durante 24horas .
  4. A la hora de hacer las croquetas con ayuda de una cuchara de postre hacer porciones pequeñas e iguales de bechamel e irlas poniendo como se ve en la foto sobre un plato con harina de uso común. Ir voleando con ayuda de las manos la masa e irlas colocando en el plato. Pasar las croquetas por el huevo batido y a continuación por el pan rallado.
  5. Disponerlas en una bandeja a medida que las vayáis haciendo y reservarlas en la nevera hasta la hora de utilizar ( máximo 2 días en la nevera) o congelarlas!!!
  6. Si las váis a freir congeladas la temperatura del aceite debe estar entre los 175º C- 185º C.
  7. Si las croquetas están sin congelar la temperatura del aceite debe estar a 190º.

I don’t know what time it will be where you live but what I can tell you is that it’s freezing here in Madrid, so I started making croquettes because I’m not leaving home today!

This bechamel for croquettes is wonderful, the amounts of milk, flour and butter are perfect to get a soft and fine bechamel. One of the most important things to keep in mind when making the croquettes is the cooking time of the béchamel.

Follow the recipe step by step and you will see how from now on you will always make these croquettes!!!

To prepare the bechamel of croquettes
  1. 1 litre of milk
  2. 125 g butter
  3. 130 g flour

  5. 180 g highly chopped Iberian ham
To be impaled by
  1. Flour
  2. 2 egg shakes
  3. breadcrumbs
  4. Olive oil
Instructions
  1. Place the milk, flour and butter on the fire in a 23 cm diameter pot and stir with a stick until it boils. Lower the heat and let it boil over medium heat for 25 minutes stirring very often.
  2. After the time add the Iberian ham very chopped and leave 20 minutes more. Salt and remove from the heat. Spread the bechamel on a tray of 30x30cm and cover blindly with transparent film( touching the bechamel with the film.
  3. Leave to cool and reserve in the refrigerator for 24 hours.
  4. When making the croquettes with the aid of a dessert spoon make small and equal portions of bechamel and put them as seen in the photo on a dish with flour of common use. Go flying with the help of the hands the dough and put them in the and place them on the plate. Pass the croquettes on the beaten egg and then on the breadcrumbs.
  5. Arrange them in a tray as you make them and reserve them in the fridge until the time to use ( maximum 2 days in the fridge) or freeze them!!
  6. If you are going to fry frozen oil temperature should be between 175º C- 185º C.
  7. If the croquettes are not frozen the oil temperature should be at 190º.
  8. Enjoy !!!!
